You're right. She's not a mexican boxer and "Ahn-hel" is more common for a boy... I prolly have like several cousins with that first name or middle name. HOWEVER!
Angel (アンヘル, Anheru, pronounced Ahn-hehl as per the Spanish pronunciation of the word, therefore properly written as Ãngel) STRAIGHT FROM SNK!!!
I haven't met anybody who is straight up Mexican that would name their Kid Angel (as in with a halo) and not Ãngel. We can't even say Sprite correctly!
We say "Esprite"! E-S-P ESPRITE

because I trust Japanese people to pronounce English words right. They didn't even pronounce it right in THEIR OWN pronounciation guide.

Her name is pronounced like you would pronounce a heavenly being with wings, nerds. It's easier that way for everyone.
