Annd I believe torkul and onix coun as dark types (dark/fire and dark/steel)- there's your steel and ground advantage.

Nope. Torkoal is pure fire and Onix is Rock/Ground. His evolution, Steelix, is Steel/Ground.

Why would you use Magmar and not his evolution?

Better question: Why would you use a Fire type period? Offensively they have good coverage, but defensively they suuuuck.
